A Pro Fish Campaign

's funny. Seeing the map of Chile, with its four thousand kilometers of coast, one could imagine a diet rich in fish and shellfish. Especially considering that not far from the coast are already the inhospitable mountains, where little grows not enough to feed many animals. Chile has a wide and interesting marine life, mostly being missed.

Indeed, in a study by Gfk Collect company (and printed by The Mercury on July 17, 2008), red meat protein consumption continue to lead the Chileans, who consume 2.1 times per week. Instead, the fish, just come to one day per week on average.

I think this is one case in which we, the cooks, we have to take responsibility for the dietary change of our customers. We note the subtly trying to do in our restaurants, but together we can create a real campaign more effective. We are a real phalanx, with a broad front and that our message is not only widespread in our restaurants or blogs or any interview. We want to make a serious media campaign (hopefully a column in a major newspaper, or a strip cut at a high rating TV program). We also want to strategically partner with the ministry of health and with one or more universities.

The message is clear, our diet in Chile should aim more towards the Mediterranean . That is, we need to start basing our diets on fish and seafood, olive oil on vegetables and a moderate intake of wine.

The recommendation is to eat fish 3 to 4 times a week, red meat one or two, a chicken and a vegetable. With so much coastline, this would not have to be difficult. However, the knowledge of our sea is limited. We know of the existence of too few fish, and therefore do not know how to cook. That makes you catch much of a variety of fish (putting the species at risk) and making the rest of the fish is priced too high (low bid). With some education, we can reverse some of these trends and begin to think of a healthier diet. I think it's time to responsibly exploit our ocean and enjoy the variety.
